tomatoes + pie = why didn't I try this before?

I forgot to mention something very important about our recent stargazing adventure: these savory tomato pies, made with this recipe. Their adorable size meant that we could easily polish off a few in couple bites, no utensils needed. And that of course meant that we each probably ate the equivalent of half a pie. But we couldn’t help it. These little guys – full of roasted tomato goodness, with onions, olives, oregano and feta – were addictive.

After making savory pies, I feel like I’ve been let in on a life-changing idea. Now I look at everything I eat with a question: would this be better wrapped in buttery pastery dough?

The answer, my friends, is almost always yes.

Oh my gosh. Endless stuffing variations just flashed across my mind. It never occurred to me to line muffin tins with pie dough. Yummy, yummy, yummy! I think I might roast all my little baby eggplants and wrap them in pastry dough. So much better than the salad I was planning.

I have a windowsill full of homegrown tomatoes meant for massive amounts of salsa. I just saw their destinies change before my eyes. I believe I will be sacrificing at least a few to the tomato pie gods. Thanks! :)

Oh yum. More tomato pies to make - we've had tomato zucchini, tomato spinach and tomato corn so far this summer - why oh why did I not think of adding olives and feta (our favs)? Well, I have piles of green tomatoes on the counter - ripen them up and away we go. Thanks for the recipe and the inspiring pictures.

Ahh, yum! My 10 year old wants hand pies for her lunch box. I've been making them and freezing them so I have 'em when needed. These will be the next version.
